Quick Beer Bread Recipe

So many times I have found myself having everything for a meal except for the bread, ack! And then I’d find myself scrambling for ingredients as I used to think you needed yeast (which I never have on hand) to make bread.

Can you make bread without yeast?

YES!! I turns out you CAN make bread without yeast. If you have a beer. Because guess what, beer has yeast. And best of all, this is such an easy recipe, and I love easy recipes! Especially ones that never disappoint, and this one always turns out just perfect.

Does it matter what type of beer you use to make beer bread?

It doesn’t even really matter what type of beer, I have found that most brands work great and it’s kind of fun to try a new bottle of beer to see what the outcome might be. Darker beer of course will give you a totally different homemade beer bread outcome then a bud light. I highly recommend using something normal for your first time making this bread (I really like to use Original Coors Gold Can Beer or Modelo) those are probably my two favorites and will make the most basic beer bread. A light beer (Coors Light, Bud Light, Miller Lite) seems to make the beer bread a little fluffier, but nothing too noticeable.

If you want to get really fancy, try an IPA Beer, a Craft Beer or a Pale Ale – but be warned, that kind of beer doesn’t always turn out the best. It is fun to test out different kinds though, so have fun with it – try YOUR favorite beer! I have tried a pumpkin beer version in the fall, and it was festive but definitely not something we would make all year long.

We usually have beer in the fridge, but at times when we haven’t, I’ve actually called a neighbor to borrow a beer, which caused a few chuckles for sure! And because I make this bread so often, we always joke about that lone beer in the fridge that needs to be saved for my quick beer bread recipe.

Ingredients for making quick Beer Bread

  • Self-rising flour (all purpose flour or whole wheat flour works too)
  • Sugar
  • Beer
  • Melted butter

Directions for making quick Beer Bread

  1. Spray a loaf pan with non-stick cooking spray and preheat the oven to 375 degrees.
  2. Combine the flour and sugar in a large mixing bowl with a wooden spoon. Stir beer in over the top. The batter will be very thick. Pour the dough into your greased loaf pan.
  3. Pour the 4 tablespoons of melted butter over the top of the bread.
  4. Bake for 35-40 minutes. Look for the top to start turning golden brown. Insert a toothpick around 35 minutes – if it comes out clean, it is done.

*it’s a nice buttery crust, so you don’t want to overdo it.

Remove the bread from the oven and allow it to cool on a wire rack.

I think that you will really enjoy this recipe – as far as quick bread recipes I go, it’s the best that I’ve found. A few dry ingredients and a beer – it’s pretty hard to beat that in terms of an easy beer bread recipe, right? It’s a great one to keep on hand in the event that you need it, and you will be surprised at how easy it really is to make!

Additional notes on making homemade beer bread:

This is a bit of a buttery beer bread, but that’s super easy to adjust by cutting back on the melted butter that you pour on top of the batter. I think I’ve gotten the amount of butter just right – but cut back a little if it’s too much butter for your liking.

People are always surprised that this beer bread doesn’t have a strong beer flavor, and the flavor will be even less if you use lighter beer. But again, if you love a strong beer flavor in your bread, use a stronger beer.

I’ve made this bread with both regular flour and self rising flour and that doesn’t seem to make too much of a difference. The version with self-rising flour might be a little fuller, but they both bake a very hearty bread and the cooking process is still the same.

These are all things that comes down to personal preferences and as you make this fresh bread recipe over and over, you’ll start modify the recipe to your liking. It really is the easiest bread to make!

How to Store Homemade Bread

I like to store bread in an airtight container or in aluminum foil in the bread box – but you can also wrap it in plastic wrap. This bread does just fine stored at room temperature (but heat it up for the best flavor when serving!)

Give Homemade Beer Bread as a Gift

Loaves of bread also make wonderful and welcome gifts, so this is a great recipe for gifting as well! I’m a huge fan of giving bread bowls, platters or cutting boards as gifts, and this is a fun way to do that.

Pair it with my special EasyGarlic Dip recipe and you’ve got a great simple appetizer!

*If gifting a loaf of bread and the seasoning mix: add 2-4 tablespoons of mix into a clear plastic bag and write the needed ingredients to make the dip, on the tag.

FAQs

What happens if you don't put enough yeast in bread? ›

It will just take longer to rise, and because of that it will be a little more flavorful. Try it. A major component of some of the more flavorful yeasty loaves, like baguettes, is something called a “poolish” which is a dough that has a very tiny amount of yeast in it left to ferment overnight.

What is the quick bread method? ›

Quick breads are prepared by the blending-, creaming-, or biscuit-method which determines the final texture and crumb of the finished product. The blending-method, also known as the muffin-method, combines the wet ingredients in one bowl and dry ingredients in a second bowl before mixing together.

Can I use beer instead of yeast to make bread? ›

Bread recipes call for yeast because carbon dioxide is the key ingredient needed to puff up the dough and make the bread fluffy. Since most beers still contain yeast cells at the end of the fermentation process, you can substitute a can of beer for yeast for a denser result.

What is the secret to success when making quick breads? ›

Quick breads are typically mixed by hand, and it's important not to overmix the batter. Overmixing can cause the gluten in the flour to develop, resulting in a tough and chewy bread. Too much or too little yeast can negatively affect the final product. For example, if there is too much yeast, the bread may collapse during baking due to the release of too much gas. What's the purpose of an egg in a quick bread? ›

For baking, eggs are particularly important as binding agents and leavening agents. The fat in egg yolks also soften gluten strands, creating a soft crumb in breads. Binding agents hold all the ingredients together.

What are the three main ingredients of quick bread? ›

Almost all quick breads have the same basic ingredients: flour, leavening, eggs, fat (butter, margarine, shortening, or oil), and liquid such as milk. Ingredients beyond these basic constituents are added for variations in flavor and texture.

What beer is best for beer bread? ›

Lighter beers, such as lagers, ales and pilsners, will give your bread a lighter color, and mild taste that just about everyone loves. Darker beers like stouts and porters make a darker-colored loaf and have a stronger beer flavor. Hoppy beers like IPAs will give your bread a more bitter taste.

Why is my beer bread so dense? ›

Overworking the dough of your beer bread will affect the texture, causing it to turn from soft and chewy to tough and condensed.

What is a good substitute for beer in beer bread? ›

I make it with lemon-lime soda (like Sprite or 7-Up). It has just a slightly smaller rise that is barely noticeable. Because of the additional sugar content, it browns just slightly more. Overall, soda is a great substitute for beer in this recipe.

Testing your yeast

How much yeast do I add to dough that didn't rise? ›

You can also try adding more yeast. Open a new packet of yeast and mix 1 teaspoon (3 g) of it with 1 cup (240 mL) of warm water and 1 tablespoon (13 g) of sugar. Let the yeast mixture proof for 10 minutes. Then, add the mixture to your dough along with some more flour so there's a ratio of 60% flour to 40% liquid.

Will bread rise more if I add more yeast? ›

The more yeast, the more gas is produced and the more quickly your dough rises. You may therefore think it best to add more yeast if you'd like to get your dough to rise as quickly as possible. However, whilst your dough may rise quickly, the dough will likely have less flavour and may even taste slightly of yeast.

Does more yeast mean fluffier bread? ›

Perfect Your Yeast Levels

Carbon dioxide is responsible for all the bubbles that make holes in bread, making it lighter and fluffier. Because gas is created as a result of yeast growth, the more the yeast grows, the more gas in the dough and the more light and airy your bread loaf will be.
